My favourite Chocolate Orange Cake Recipe








Ingredients:

6 oz of unsalted butter

6 oz of Caster Sugar

4 oz of self raising flour

2 oz of Coco Powder

3 eggs

 1 medium sized orange

1 bar of chocolate orange

















 Method

1. First preheat the oven to gas mark 5.

2. Next great some orange peel from the orange and squeeze out all the juice.

3. Cream butter together until it's light and fluffy.

4. Then beat into the mixture 1 egg at a time mixing it together.

5. Add the orange peel and mix together.

6. Next mix the flour and coco powder together and sieve half into the mixture and gently mix it in. Then sieve in the rest of the flour and coco powder and just keep mixing gently until it's all mixed in.

7. Add all the orange juice and add 1/2 teaspoons of olive oil. Then mix in.

8. Divide mixture into muffin cases and bake for 15-20 mins in the middle of the oven.

9. After 15 minutes take out of the oven and check if they are nice and firm to the touch.

10. Take out of the oven and leave in the baking tin for ten minutes.

11. Place on a wire rack and wait for them to cool.

12. Melt a chocolate orange bar and ice the cakes with it. Then top it with crumbled chocolate orange.

My Favourite Strawberry Swirly Cupcake Recipe

Ingredients

4 oz Caster Sugar

4 oz Soft Margarine

2 Medium Eggs

4 oz Self Raising Flour

1/2 tsp Baking Powder

2 tsp Strawberry Jam (sieved)

To Decorate

2 oz unsalted butter ( room temperature)

11oz of sifted icing Sugar.

4oz of full fat cream cheese.

Some pink food colouring.


Method

1. First preheat the oven to gas mark 4 and line a muffin tray with 12 cases.

2. Then put all of the ingredients into a mixing bowl(except for the jam.)

3. Add 1/2 tsp of jam to each case and swirl it all up.

4. Then leave to cool.

For the frosting

1. Beat the butter until it is nice and soft and slowly start to add the icing sugar until the mixture is light.

2. Next add the cream cheese and whisk until fluffy.

3. Divide the mixture in half and the beat the food colouring into one half.

4. Then fill a piping bag half with Strawberry cream and half with plain cream. And pip swirls onto the cakes.

5. Your cakes are now ready but make sure the cakes are kept in an airtight tin for three days so they keep nice and fresh.

Cupcake Highlight of the Week!!!!!!!!!

My Favorite Oreo Recipe


 
 Hi it's Ellie and this weeks post is about my favorite Oreo recipe.
I hope you like it and decide to make it your self at home.

Ingredients;

For the cupcakes you will need;

6 Oreo biscuits

115g of unsalted butter, softened.

115g of Caster Sugar

1/2 tsp of Vanilla Extract

100g Self-Raising Flour

20g Coco Powder

2 large eggs (beaten)

1tsp of Milk

Now to make the frosting;

50g of Butter Softened

80g Cream Cheese, cold

175 Icing Sugar

And finally 6 Oreo Biscuits.

To Decorate

11 mini Oreos

Method

1. For the Cupcakes; You should ask an adult to preheat the oven to 180c/160fan/gas mark 4.

2. Line a muffin tray with 11 (or more) paper cases.

3. Seperate the Oreos and place half of them into the cases (at the bottom.) If you have any cream filling face it upwards.

4. Then cream together the sofented butter and caster sugar, also along with the vanilla extract, until it's pale and fluffy.

5. Next sift in the flour and Coco powder. Then add the two beaten eggs and make sure you mix well taking care. Stop once all of the dry ingrediants are well incorparated.

6. After that add the milk and then beat briefly to combine.

7. Then divide the mixture evenly beatween the cupcakecases.

8. Bake for 22-25 minutes.

9. For the frosting; Place the six large oreos into a foodprossecer and then wizz into crumbs. Alternitivly, you place the oreos into a plastic bag and then smash with a rolling pin.

10. Next rub the sofened butter into the icing sugarusing  the back of a wooden spoon. Do the same with the cream cheese.

11. Once the icing sugar has been incorpareted, the whisk with an electiric mixer until light and fluffy.

12. Gently fold the oreo crumbs into the frosting, being carefull not to over mix. If the frosting is a little runny at this stage, place in the fridge to chill for 15 minutes.

13. To Decorate: Cover each cupcake with the frosting and finish with a little oreo.
